Vitamin D is a water-insoluble compound presented in two main forms (D2 and D3), susceptible to environmental conditions. Microencapsulation an alternative supplements preserve vitamin properties foods. Entrapment efficiency (EE) the property evaluate encapsulation effectiveness therefore it of interest study analytical methods for identification quantification this within particle. This paper describes low cost UV–Vis methodology validation D3 microparticles produced by hot homogenization. The method was validated following International Conference on Harmonization (ICH) guidelines. To guarantee safe application foodstuff, toxigenicity evaluated with Allium cepa L. vivo model, showing no cytotoxic nor genotoxic potential. High entrapment obtained, results also demonstrated that concentration can be safely accessed method.
